Harissa prawn skewers
These prawn skewers, served with a carrot couscous and a delicious minty humus, tahini and garlic yogurt, are low in fat and calories. Grill skewered seasoned prawns, tomatoes and onion wedges while you prepare the couscous by adding grated carrot. Mix tahini, lemon juice, garlic, yogurt, and seasoning to make a sauce. Stir the mint though the carroty couscous, transfer to a large platter and neatly arrange the skewers on top. Don’t let any of those leftover cooking juices go to waste, so with what’s left, drizzle it over the dish. Finish with a tablespoon of sauce and serve with lemon wedges.
Red curry chicken kebabs
Eating healthy doesn’t mean you can’t have a bit of spice in your life, and this recipe is sure to get the taste buds tingling. Tip chicken pieces, curry paste and coconut milk into a bowl, and mix it all together. Place vegetables of your choice and the chicken onto skewers and cook on a very hot grill for between five and eight minutes or until the chicken is cooked through. Moisten with lime and serve with rice and salad.
Actually, you don’t have to cook to eat healthy. Pita bread wraps, filled with lean meat such as ham and summer salad are perfect for a light lunch or for school snacks. What you put in the wraps is up to your taste, but the most common ingredients include tomato, lettuce, avocado and cheddar cheese. To make more like a meal, lightly toast the wraps on a grill until they are golden and the cheese melts.

Many people avoid this food favourite because of a belief they might be unhealthy. Well, you can make your own pizza brimming with great food and good health. Simply buy a wholemeal pizza base and top with healthy ingredients like lean ham, tomatoes, avocado, capers or whatever else you fancy. Top with mozzarella cheese (or a light chees if you prefer) and sprinkle with virgin olive oil. Cook in the over until crisp and golden, or better still use a pizza stone on your barbecue.

Summer fruit quinoa salad
Finally, everyone needs a good summer salad as a side dish or as a stand-alone light meal. The summer fruit quinoa salad is both healthy and tasty, and is ideal as a side dish or a meal starter. Simply boil the quinoa until it is tender and then leave it aside to cool. Add peaches, nectarines or apricots, hazelnuts, mint and parsley. Mix together, sprinkle with olive oil and serve.
