summer food

As summer approaches so does our desire to leave the claustrophobia of winter behind. And what better way to do this than to enjoy a healthy meal under a blue sky. So drag out the barbecue, go outside and make the most of the day.

Of course, not all meals need be cooked outside and you can find quite a few healthy options to cook in the kitchen to eat around the dining room table. Here are a few healthy food ideas that can be cooked on either a barbecue or kitchen grill to help you get fit this summer.

Harissa prawn skewers

These prawn skewers, served with a carrot couscous and a delicious minty humus, tahini and garlic yogurt, are low in fat and calories. Grill skewered seasoned prawns, tomatoes and onion wedges while you prepare the couscous by adding grated carrot. Mix tahini, lemon juice, garlic, yogurt, and seasoning to make a sauce. Stir the mint though the carroty couscous, transfer to a large platter and neatly arrange the skewers on top. Don’t let any of those leftover cooking juices go to waste, so with what’s left, drizzle it over the dish. Finish with a tablespoon of sauce and serve with lemon wedges.

Red curry chicken kebabs

Eating healthy doesn’t mean you can’t have a bit of spice in your life, and this recipe is sure to get the taste buds tingling. Tip chicken pieces, curry paste and coconut milk into a bowl, and mix it all together. Place vegetables of your choice and the chicken onto skewers and cook on a very hot grill for between five and eight minutes or until the chicken is cooked through. Moisten with lime and serve with rice and salad.

Healthy wraps

Actually, you don’t have to cook to eat healthy. Pita bread wraps, filled with lean meat such as ham and summer salad are perfect for a light lunch or for school snacks. What you put in the wraps is up to your taste, but the most common ingredients include tomato, lettuce, avocado and cheddar cheese. To make more like a meal, lightly toast the wraps on a grill until they are golden and the cheese melts.
